Calabria Regional Dinner

Our first destination Calabria - the most southerly toe of the boot, with a warm humid climate, a coastal region bordered with highlands and rugged mountains.

Calabrese cuisine uses methods of preserving - salting, oiling, curing and smoking of pork, fish and vegetables.

From the earthyness and anise flavour of licorice, the essence of bergamot to the sweetest taste of the red onion from tropez to the hottest and most famous Calabrian pepperoncini which is found in most typical dishes and are often known to be spicy. Favourites of eggplant served in variety of ways.
